Here's what for dinner this week!
- Grilled Chicken with Spinach and Melted Mozzarella served with whole wheat angel hair on the side tossed in a little EVOO, parmesan and, s & p.
- Southwest Turkey Meatballs with Creamy Cilantro Dipping Sauce I am going to serve this with orzo and maybe a black bean and corn veggie medley.
- Chicken Quesadillas
- Lasagna I make this a little healthier by using low fat ricotta, low fat mozzarella, and I am going add 93% lean ground beef to my sauce because my husband needs meat. Served with a side salad. Believe it or not, this is going to be the first time I've ever made homemade lasagna. Hope it turns out good.
- Grilled Halibut with Fresh Mango Salsa with organic jasmine rice and steamed broccoli. I've got 3 ripe mangos I need to use up and figured this was a great way to use them! Looks delish!
